Before launching this jam, I had tasted several strawberries, and I finally opted for the strawberry from France, which besides the powerful aromas of the strawberry, develops an acidic freshness that allows to keep a nice balance once transformed into jam.
I started out with strawberries from the Rhone Valley, and then I discovered farm producers a few miles away. The fruits are harvested from May to July - self-service picking.
