The pears come from our orchard in Puligny-Montrachet, the village just north of Chassagne-Montrachet on the Côte de Beaune. They are collected as they fall on the ground, when they have reached maturity. This aspect is essential to ensure that the fruits will develop all their aromas when processed into jam.
