  • Vineyard: Les Bas-Doix, Les Danguerrins, Les Argillières, Les Drazeys, Aux Croix, Les Clos, Les Bussières, Les Cras.
  • Aging: Approximately 18 months in French oak barrels, 20 to 30% of which are new barrels.
  • Wine personality: Made from different plots harvested at their optimal ripeness and blended after fermentation, this wine reveals great complexity thanks to its varied origins and the diversity of soils, influenced by the presence of the valley and the resulting debris and deposits. The Bajocian limestones actually sink at the village level, increasing the differences between the plots. It has a distinct character, always with a lot of minerality on the finish. It reaches its optimum after 4-5 years, though some vintages may require a longer wait.
  • Cellaring and tasting advice: Pleasant to drink at a young age, but best to wait until it reaches 5 years old – aging potential of 10 to 20 years – Serve at 15-17°C.
  • Food pairing: Enjoy with a dish of salted meat with lentils, a venison fillet with lingonberries. Dishes with chanterelles, poultry, hares, foie gras quenelles, chicken liver terrine, fruity cheeses that are not too strong (Reblochon, Cîteaux)
