The Vineyard The parcels in the Chablis appellation are mostly located in the village of Fleys, but also in the communes of Chichée and Fontenay, with a total surface area of 12 hectares. They are primarily oriented north and northwest, on a Kimmeridgian soil made up of clay-limestone marls. The oldest of these vines are 35 years old. All the parcels are managed using organic farming methods.
The Winemaking After a light settling, the juice is transferred into vats. From there, it undergoes alcoholic fermentation thanks to the natural yeasts present on the grapes, followed by a natural malolactic fermentation. This is followed by a long aging process to refine the aromas and develop the complexity of the flavors. If necessary, a bentonite fining is carried out to remove the proteins, as well as a cold stabilization process to eliminate tartar crystals. Then, a tangential filtration is performed, which is currently the most wine-friendly filtration method. The wine is bottled between 14 and 18 months after harvest.
