The Vineyard
The Vaucoupin plots are located in the village of Chichée. They are very steep and face directly south, with an average age of 40 years. The total area is 1.45 hectares. The vines are planted on Kimmeridgian soil made up of clay-limestone marls with a predominance of clay. All the vines are cultivated using organic farming methods.
The Winemaking
After a light settling, the juice is racked into vats. From there, it undergoes alcoholic fermentation thanks to the naturally occurring yeasts on the grapes, and its malolactic fermentation also starts naturally. This is followed by a long aging process to refine the aromas and develop the complexity of the flavors. If necessary, a bentonite fining is carried out to remove the proteins, followed by cold stabilization to eliminate tartar crystals. Then, a tangential filtration is performed, it is currently the most wine-friendly filtration method. The wine is bottled 16 months after the harvest.
